Jams and preserves
Jams and Preserves are produced continuously thanks to a revolutionary system of thermal treatment based on the Unicus®
Dynamic Heat Exchanger.
The Unicus® is used to heat and cook the fruit and other ingredients working as a reactor in which the product
is cooked and pasteurised continuously.
Advantages:
- Continuous production of jams and preserves.
- Better product quality. The thermal treatment is rapid because of the agitation and mixing effects of the dynamic elements within the
Unicus®. In addition the treatment is homogenous and effective because the mixing within the heat exchanger is complete. The result are more natural jams
and preserves with more fruit taste.
- Saving in pectin.
- The heat exchanger does not get dirty allowing production runs to be as long as required by the operator.
